Healthy Zuppa Toscana Soup (Sausage and Kale)

I have made Zuppa Toscana before on this blog. However, recently, I have changed my eating habits to avoid dairy and starch so I have had to figure out new ways of making some of my old soups. This one did not disappoint! Even my husband, who is not a huge fan of soup, loved this one. It will definitely become a staple in our house this winter. Healthy Zuppa Toscana Soup 1 tablespoon of organic olive oil or grass fed butter (I love Kerrygold !) 1 pound of ground Italian sausage (I use mild, but if you like spicy soup, go for the spicy!) 6 cups chicken bone broth (you can use regular chicken broth, but you'll get more protein using bone broth) 1/2 large head of cauliflower broken into florets. (I am lazy so I just buy the microwaveable pouches in the produce section. They are about 10 ounces at our store and it is the perfect amount. Everyone from Kerrville remembers a fantastic little restaurant we had here called the Old Republic Inn. They had the best food and everyone misses Carole Curry and her great recipes. A friend of mine was recently wondering about their recipe for Cream of Jalapeno Soup which as luck would have it, my mom actually had. I am a HUGE soup fanatic and this one is heavenly. It's not as spicy as you would think. Just depends on the heat in your jalapenos that day and you can add more or less to suit your heat preference. Enjoy! Spicy Pumpkin Sausage Soup

Spicy Pumpkin Sausage Soup Seriously, y'all! My new favorite. You will not be disappointed! Low carb, Keto-friendly, dairy free option. Make it... Like right now! 1/2 pound bacon 1 pound pork sausage 1 diced yellow onion 4 garlic cloves, minced 1 T Italian seasoning 1 tsp red pepper flakes (more if you like it really spicy!) 1 tsp kosher salt 1 15 ounce can pumpkin (just plain pumpkin) 4 cups chicken stock 1 cup heavy cream (use coconut milk for dairy-free option) Roasted pumpkin seeds (for garnish) Cook bacon in stock pot until crisp. Remove to drain and reserve bacon grease in pan. Chop bacon when cool for garnish. Add pork sausage to pan and cook until browned. Add chopped onions, garlic, Italian seasoning, red pepper flakes and salt. Cook until onion is translucent. Add pumpkin and stir to combine. Add chicken stock.
