Healthier Peanut Butter Cookies

 We love sweets but our waistlines certainly do not.  My husband literally eats peanut butter out of the jar. These cookies combine both our love of sweets and his love of peanut butter, but in a way that helps a little with our sugar consumption.  You won't miss the regular sugar though and they are gluten and dairy free!

  • 1 cup natural, no sugar added peanut butter
  • 1 cup Swerve granular sweetener (or monkfruit sweetener)
  • 1 egg
  • 1 tp vanilla
  • fleur de sel 
  • dark chocolate chips (optional)

Preheat oven to 325

Mix all ingredients well (except fleur de sel and chocolate chips) and using a spoon or scoop, place tablespoon size balls on a parchment lined cookie sheet.  Using a fork press down slightly and then turn and criss cross the fork to create a pattern.  Press chocolate chips into top of each cookie (if using).  Sprinkle each cookie with fleur de sel.  Bake for 17 minutes.  Remove and let cool for 10-15 minutes.  Store in a tightly covered container.  Cookies will be soft, but will harden as they cool.
